Biltong Breakfast Taco Ingredients: •4 Homemade Masa Tortillas (See previous recipe post) •4 Fresh eggs •1 red onion, halved •1 red chili pepper •1 bunch mint •1 bunch cilantro •1 bunch parsley •3 Tbsp olive oil •Juice of 2 limes, squeezed •Salt and Pepper to taste •1/2 cup of red wine vinegar •1 teaspoon sugar •1 teaspoon salt •1/2 cup of mayonnaise •1/2 cup of sour cream •2 tinned chipotles in adobo •1 sliced avocado •1 Tablespoon C&C Beef Tallow •3.5oz bag of C&C Traditional fatty bilton •Tinyleaf Microgreens to garnish Directions: Spicy salsa verde sauce: roughly chop 1/2 a red onion, red chili pepper and the fresh herbs. Add olive oil, juice of 1 lime, salt and pepper. Grind using a pestle and mortar. Pickled Red onion: Mix 1 tsp salt and 1 tsp sugar with red wine vinegar. Finely slice half a red onion and add it to the liquids to pickle, add half a cup of hot water for a quicker pickle. Spicy Chipotle crema: Add mayonnaise, sour cream, juice of 1 lime and chipotles to a jug. Salt to taste. Blend with immersion blender. Heat a pan on the stovetop, melt beef tallow, crack egg into the pan and baste with hot tallow. Assembly: Place fresh made masa tortilla down. Top with a tallow fried egg, C&C sliced biltong, pickled onions, crumbled feta and salsa verde. Garnish with @tinyleafmicrofarm and a squeeze of lime.
