Trey & Nicole's story began in 2015 when they met in Florida. Both hailing from South Africa, they shared a profound love for food that fueled their adventures around the world on yachts. Nicole, a Chef, and Trey, an Engineer, discovered their perfect synergy in these early days, where they explored diverse cuisines and cultures. 

 

Their journey into the world of biltong began quite humbly, with Trey building drying boxes from plywood and computer fans to experiment with making biltong for the yacht crew. This passion quickly spread among friends in every port, establishing them as the go-to biltong suppliers.

 

The yachting industry exposed them to the finest ingredients, allowing them to perfect their biltong recipe. This recipe, rooted in artisan craft, care, and South African tradition, brought a unique twist to the typical cuts of meat used back home.

 

At Cut & Cured Co., we are committed to practicing our craft with the utmost dedication to quality and sustainability. Our beef is locally sourced and organic, strictly grass-fed and grass-finished. Here's why that matters:

 

While many meat producers label their products as ‘grass-fed’ after feeding cattle grass at any point in their lives, our ‘grass-finished’ label guarantees that our cattle ate grass throughout their entire lives, right up to harvest. This means no antibiotics, hormones, or GMOs in our beef.

 

Our biltong is made using a slow, low-heat drying and curing process, which differs from traditional jerky. We use no high temperatures, smoke, or sugar. Instead, we naturally cure and preserve our biltong with vinegar and salt, keeping the meat tender and nutrient-dense, and free from chemical preservatives.

 

The result? A clean, delicious source of protein that's easy to snack on anytime, anywhere.
